Low carb bread

As i’ve been rolling this low carb lifestyle for a while now there are certain things that i miss in the “old” eating habits. Bread being one of them. One day i bumped into a marvellous recipe which allowed me to put bread back into my life ­čÖé

  • 2 eggs
  • 1tbsp psyllium fibre
  • 1tbsp almond flour
  • 1 tbsp coconut flour
  • random amount of seeds┬á(i put abt 1 tbsp hemp seeds but you can use what ever you wish)
  • about 100 g cheese (grated)
  • 1,5-2 tsp baking powder

Mix em all together and form your breads on the oven tray. The texture should be quite soft and more liquid than the regular bread dough yet solid enough to not go all flat. You can make it go lighter by adding one more egg or even some natural yoghurt and more solid by adding more almond flour etc. By trying out the different consistencies you can find the one that works best for you. Bake in the oven (225┬░C) until they get a nice amount of color (this doesn’t take a very long time so be ready ­čÖé ).

I always kind of resented meatloaf.  Those biiiiig chunks of tasteless and dry meat, but after a little surfing for cool minced meat recipes i found some cool recipes and combined the best bits to make one surely tasty meatloaf.

  • 400g minced lamb meat
  • an egg
  • 50 g grated cheese
  • 4 cloves of garlic, crushed
  • salt
  • pepper
  • parsley
  • other spices according to your taste

Mix the ingredients well. take half of it and mold it into the bottom half of the loaf.

  • 100g cheese
  • 2 boiled eggs
  • ~8 bacon strips

Peel the eggs and place them and cheese on top of the bottom part of the loaf and put the upper half in place. Form into a nice loaf. Top it with the bacon strips.

And then bake in the oven at 175┬░C for 30 to 45 min, or until it is nice and ready.

You can serve it with a nice salad and some cottage cheese, for example.

I made some awesome meatballs today and thought id share them with you. Here’s what i did:

  • 500g minced moose meat┬á(you can try different kinds of meats here, try lamb; i bet its good here too)
  • 400g ground beef/pork
  • 6 bacon strips
  • 150 cheese (the fattier the better)
  • 9 garlic cloves
  • 2 onions
  • 3 eggs
  • salt
  • pepper
  • parsley
  • your other┬áfavourite┬áspices

Cut the onions, grate the cheese, crush the garlic and cut the bacon in tiny bits. Then just throw all the ingredients together and mix well. Mold into meatballs.

Then put in the oven; 200┬░C for about 20 minutes or until done.


you can also mold them into some nice burgers. I even topped mine with some cheese just before they were ready and let the cheese melt ontop. very yummy:)
